Jeg elsker at lave pasta, det er s\u00e5dan en smuk og alsidig ting, man kan jo lave alt fra en simpel nuddelret til lasagne og avancerede fyldte pasta puder og diverse foldede og lynstegte delikatesser ud af noget s\u00e5 enkelt som mel og \u00e6g.<\/p>\n\n\n\n

B\u00e5de p\u00e5 Italiensk og fransk bruger man udtrykket dej lidt anderledes end vi g\u00f8r p\u00e5 dansk. Pasta betyder jo blot dej, men det lyder lidt bedre at sige \"lad os spise pasta\" end at sige \"lad os spise dej\". Dej har ikke helt den samme klang og ja det ville n\u00e6sten v\u00e6re lidt klamt, hvis vi gik rundt og sagde lad os spise dej, eller hvad t\u00e6nker du? Men det er nu engang det, som det betyder og pasta er jo ogs\u00e5 bare en dej, en meget simpel dej, lavet af mel og \u00e6g i sin mest n\u00e6rende udgave og ellers blot med vand.<\/p>\n\n\n\n

Jeg t\u00e6nker de fleste kan huske da den store \"italienske\" madb\u00f8lge ramte Danmark. Jeg husker det som i start 90'erne. Det var her hvor vi pludseligt skulle spise tonsvis af pasta med pesto genovese p\u00e5 glas, hvidt br\u00f8d og kulhydrater en masse. S\u00e6rligt fordi Sundhedsstyrelsen nu sagde, at det var det sunde og madpyramiden lignede en forvokset krydderbolle med pastah\u00e5r og lidt planteolie p\u00e5 toppen. Det var ogs\u00e5 her at den \"fedtfri\" b\u00f8lge, blev meget moderne. Cheasy og K\u00e6rg\u00e5rden, rejste sig som var de nationalklenodier, som alle burde k\u00f8be og v\u00e6re stolte af at servere, som \"\u00e6gte\" sm\u00f8r og ost, selvom de blot var \"falske pr\u00e6fabrikerede produkter\". <\/p>\n\n\n\n

De s\u00e5kaldte \"italienske\" retter, blev til hverdagsmad i vores hjem. Vi fik lasagne fra karolines kogebog, spaghetti med k\u00f8dsovs, fettucine med grana osv. Vi k\u00f8bte fryse pizzaer og n\u00e5r vi var heldige blev der hentet diablo pizza fra det \"nye\" Pizzaria i Horsens. Superbrugsen i Gedved blussede med s\u00e5kaldte italienske specialiteter og ja Salling Super i \u00c5rhus, havde de finere varer, som frisk mozzarella, \u00e6gte parmesan og finere italiensk is til en formue for 500g. Det var vitterligt en helt s\u00e6rlig tid, hahahaha! <\/p>\n\n\n\n

Det var dog ikke s\u00e6rligt italiensk n\u00e5r det kom til stykket, alt det der pr\u00e6fab k\u00f8bemad. Det var heller ikke s\u00e6rligt sundt vel? Men markedsf\u00f8ringen af det hele, solgte en dr\u00f8m om Italien, om en moderarketype, familie og alt muligt, som vi danskere slet ikke var. Men s\u00e5 kunne vi k\u00f8be os til lidt af det, i plastpakker og frysepizzaer, l\u00f8rdags lasagne og hvad ved jeg af h\u00e5bl\u00f8s fastfood, som var pakket ind i en dr\u00f8m om pepita ternede duge, italiener musik, \"Italiensk for begyndere\" og Il Tricolore. <\/p>\n\n\n\n

Den del af \"Italiensk\" mad og kultur har bare aldrig tiltalt mig. <\/p>\n\n\n\n

Lige siden jeg rent faktisk flyttede til Italien den f\u00f8rste gang. har jeg set det som en h\u00e5n imod et ekstremt delikat og alsidigt k\u00f8kken, som er baseret p\u00e5 h\u00e5ndv\u00e6rk og en virkelig smuk mad tradition. En tradition som altid har handlet om enkle r\u00e5varer i h\u00f8jeste kvalitet. Hvor slowfood er basis, fordi man faktisk lavede alt fra bunden i et roligt tempo f\u00f8rhen. <\/p>\n\n\n\n

Der var ikke meget plastik indpakning over traditionel Mamma mad. Ligesom jeg viser her hvor pastaen laves i langsomt tempo med friskmalet mel og hele \u00e6g. S\u00e5dan som pasta oprindeligt er blevet lavet og stadigv\u00e6k bliver det af de Mammas og Nonnas der kan og vil. <\/p>\n\n\n\n

Vi har boet over 3 \u00e5r i Italien sammenlagt, lidt over to \u00e5r i Emilia Romagna, og et \u00e5r fordelt i Toscana og Trentino Alto Aldige\/S\u00fcdtirol. Vi har kendt mange italienere og ja desv\u00e6rre k\u00f8bte langt de fleste af dem t\u00f8r k\u00f8be pasta. Det var faktisk de f\u00e6rreste af dem, der selv kunne lave mad. Den moderne livsstil og feminismen har gjort meget for, at udrydde den stork\u00e6rlige og altomfavnende italienske Mamma. Det er en trist fact. som ikke er sv\u00e6r at se, da de fleste restauranter og trattoriaer i dag, hverken er k\u00f8rt af Mammas og Nonnas, men af m\u00e6nd. <\/p>\n\n\n\n

Det er dog noget som er forholdsvist nyt, jeg har nemlig kendt til flere trattoriaer der var k\u00f8rt af familier med Mamma eller Nonna i spidsen. Jeg har ogs\u00e5 kun kendt italienere, som havde en gammel Mamma eller Nonna, som bestemt kunne lave mad.<\/p>\n\n\n\n

Men i de yngre generationer har man ikke haft den store lyst til, at l\u00e6re at lave mad. Mamma er blevet smart i en fart og har haft meget lidt travlt med, at l\u00e6re at lave mad, p\u00e5 den gode gamle m\u00e5de. Jeg kender faktisk ikke en dygtig kvindelig hjemmekok som er under 60. Hvilket jeg ser som en stor falliterkl\u00e6ring, for et land hvis madtraditoner er s\u00e5 smukke, enkle og baseret p\u00e5 h\u00f8j r\u00e5varekvalitet og teknik.<\/p>\n\n\n\n

Heldigvis har jeg oplevet at f\u00e5 vidunderlig mad mange gange i Italien. Det var dog oftest tilberedt af m\u00e6nd eller virkeligt gamle damer, som bare kunne det der med pasta og saucer og alt muligt andet fantastisk mad. <\/p>\n\n\n\n

Denne enkle pasta indeholder 2 ingredienser og her er det hele friskmalede speltb\u00e6r og hele \u00e6g. Der er ingen industri mel eller fastfood over det. Det tager faktisk over halvanden time at lave den her pasta og det kan man ikke \u00e6ndre det store p\u00e5. Det er dog tiden v\u00e6rd, da det smager sk\u00f8nt og man bliver glad over man ikke bare k\u00f8bte en eller andet plastik indpakket falsk udgave fra supermarkedet. Det f\u00f8les rigtigt n\u00e5r man st\u00e5r med det i h\u00e5nden og n\u00e5r man spiser det fra gaflen\/skeen. Man kan smage r\u00e5varene, enkelheden og k\u00e6rligheden og arbejdet bag.<\/p>\n\n\n\n

En pasta lavet p\u00e5 friskmalede speltb\u00e6r. Det kan tage lidt tid at f\u00e5 f\u00f8lelsen af pasta dej, en pasta maskine g\u00f8r kun udrulningen let, men den kan ikke m\u00e6rke hvorn\u00e5r din dej er klar, det er kun dine h\u00e6nder der kan det. <\/p>\t<\/p>\n\t

    • 300 g Hele speltb\u00e6r<\/li>
    • 3 XL Hele \u00e6g<\/li><\/ul>\t<\/div>\n\t
      \n\t\t

      1. Kv\u00e6rn spelten s\u00e5 fint s\u00e5 muligt, p\u00e5 min kv\u00e6rn er det p\u00e5 1 for spelt.<\/p>

        <\/li>

      2. Jeg foretr\u00e6kker at lave det i en sk\u00e5l, selvom alle altid g\u00f8r det i en mel vulkan p\u00e5 et bord. Meeen det g\u00f8r jeg aldrig, i stedet bruger jeg en stor r\u00f8resk\u00e5l og her laver jeg en udhulning i midten.<\/p>

      4. Pisker \u00e6ggene sammen med en gaffel.<\/p>

      6. S\u00e5 bruger jeg min ene h\u00e5nd til at blande mel ind i \u00e6ggemassen.<\/p>

      7. Det tager lidt tid at f\u00e5 skabt en dej kugle her. Hav t\u00e5lmodighed lige pludseligt er den der og s\u00e5 er det tid til at \u00e6lte.<\/p>

      8. S\u00e5dan ser min dej ud inden jeg g\u00e5r i gang med at \u00e6lte den.<\/p>

        <\/li>

      9. Pasta dejen skal tr\u00e6kkes og foldes for at blive glat. Denne \u00e6ltning kan v\u00e6re lidt fysisk h\u00e5rd og det tager ca. 10-15 minutter at f\u00e5 en pasta dej glat. Start med at str\u00e6kke dejen s\u00e5 langt du kan uden at bryde den.<\/p>

      10. Fold s\u00e5 dejen indover sig selv og gentag indtil dejen begynder at f\u00e5 en glat og j\u00e6vn f\u00f8lelse. Jeg plejer at s\u00e6tte et \u00e6ggeur til 10 minutter og er jeg ikke der hvor jeg f\u00f8ler dejen er l\u00e6kker glat og ikke klistrer, s\u00e5 giver jeg den 5 minutter til. <\/p>

      11. N\u00e5r dejen kan formes til en glat kugle uden du f\u00e5r dej p\u00e5 fingrene og den er helt glat og skinner let p\u00e5 overfladen er den klar. Nu skal den pakkes ind i et stykke vokset h\u00f8r eller plastfolie hvis man bruger det. Lad dejen hvile i minimum 30 minutter og gerne en times tid p\u00e5 k\u00f8l.<\/p>

      12. N\u00e5r dejen har hvilet sk\u00e6rer jeg den ud i 4 dele og presser den f\u00f8rste del ned med en flad h\u00e5nd og ruller den til den er ca. 20mm og gentager med alle delene. S\u00e5 er de klar til pastamaskinen. Har man ikke en pasta maskine, s\u00e5 arbejder man videre med sin kagerulle pr\u00e6cis som hvis man havde en pastamaskine. Det er det samme man g\u00f8r med en kagerulle, man ruller, folder og ruller igen. For hver gang ruller man s\u00e5 bare tyndere og tyndere ud.<\/p>

      13. Der er flere niveauer p\u00e5 en pastamaskine, der er ca. 6 hak p\u00e5 min gamle Imperia. S\u00e5 man starter med det hak som er bredest. <\/p>

        <\/li>

      14. S\u00e5 tager man og indf\u00f8rer dejen 3 til 4 gange p\u00e5 de f\u00f8rste tre hak, det vil sige. Man k\u00f8rer dejen igennem og folder den 3 gange og k\u00f8rer igennem det samme hak igen, og gentager dette til dejen kommer ud som glat. N\u00e5r man er kommet til det mellemste hak k\u00f8rer man dejen p\u00e5 n\u00e6st sidste\/n\u00e6st fineste hak og n\u00e5r dejen ser fin og glat ud, sk\u00e6res kanterne p\u00e5 dejen og den drysses med mel og k\u00f8res igennem det sidste hak hvis man laver lasagne plader. <\/p>

      15. Hvis man vil lave fettucine eller linguine, skal pladerne ikke v\u00e6re liges\u00e5 tynde som til lasagne. S\u00e5 man ruller de meldryssede plader igennem fettucine\/linguine pasta indstillingen p\u00e5 maskinen. Det er ogs\u00e5 her man folder sin dej i 3 og sk\u00e6rer ud med en kniv, hvis man laver traditionel Mamma pasta uden maskine. (Husk at drysse med mel, ellers risikerer man at pastaen klistrer sammen og ja, s\u00e5 er det forfra). <\/p>

      16. Jeg har lavet fettucine nudler her og jeg har formet dem i fuglereder og langt dem p\u00e5 et stykke h\u00f8r og t\u00f8rre, indtil de skal koges i rigeligt spilkogende vand.<\/p>

      17. Det g\u00f8r det lettere at overf\u00f8re til det kogende vand og pastaen klistrer ikke sammen under kogning. Jeg kogte denne pasta aldente, det tog ca. 5-6 minutter i spilkogende vand. Det tager l\u00e6ngere tid for spelt at blive aldente end for hvede pasta, s\u00e5 l\u00e6g et par minutters ekstra kogetid til.<\/p>
